Makin' Banana Pancakes

...pretend like it's the weekend now.

You will need:

1 cup all-purpose flour (I use Cup4Cup)
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas mashed

1. Mix flour, sugar, baking powder, and salt in a bowl. In a separate bowl, cream together egg, milk, oil, and bananas.

2. Beat the two mixtures together. The batter will be lumpy--that's okay.

3. Cook on a hot griddle like traditional pancakes and top with sliced bananas.

Extra points for those who serve it with coconut syrup.

  1. hope you were listening to jack johnson while making these!! they look great.

  2. Every time I hear someone say 'banana pancakes', I think of Jack Johnson! These look so yummy! :)

  3. Love banana pancakes! These looks delicious! I have been hooked on making the TIU protein pancakes.

  4. I was just about to make the Jack Johnson comment. Lol! That's one of my favorite songs by him.
